Julie’s Nut Roast recipe

 

What you need:
680g (1½lbs) approx mixed nuts in roughly equal proportions. (brazils, almonds, hazel nuts, cashews, and a smaller quantity of walnuts)
2 medium onions
2 cloves garlic (optional, or more according to taste!)
400g (14oz) chopped tomatoes (1 standard tin)
2 generous teaspoons herbs (I use thyme and lovage – oregano and/or basil would also work)
optional: 1 heaped teaspoon of each ground coriander, ground cumin
salt and pepper to taste

 

Here is the method:
Using a food processor, process the nuts finely and place in mixing bowl.
Process the onions and garlic finely and add to the nuts.
Add remaining ingredients and stir.
The mixture should be sloppy but not too runny.
Tip into any baking dish and cook in the centre of the oven (approx Gas 4, 175C, 350F) for about 45mins, until crisp round the edges and browning slightly on the top.
