Julie’s mum, Jess, used to make these Lentil Flatties

 

What you need:
4 oz (115g) red lentils
1 onion, finely chopped
½ pint (280ml) water
4 oz (114g) self raising flour
1 level teaspoon (or more) curry powder
1 egg
3 tablespoons milk
Oil for frying
Salt and pepper

 

Here is the method:
Fry onions gently in oil (preferably olive oil), until soft.
Add lentils and water, and cook gently for approx 25-30 mins, until the lentils are soft.
Stir occasionally to prevent sticking, and add a little more water if necessary.
Make batter with the flour, curry powder, egg and milk.
Mix together the lentil mixture and batter.
Season to taste.
Heat oil in a frying pan, and drop half cupfuls of the mixture into the pan.
Cook for a few minutes each side.
