Julie’s mum, Jess, used to make these Lentil Flatties
| What you need: |
| 4 oz (115g) |
red lentils |
| 1 |
onion, finely chopped |
| ½ pint (280ml) |
water |
| 4 oz (114g) |
self raising flour |
| 1 level teaspoon (or more) |
curry powder |
| 1 |
egg |
| 3 tablespoons |
milk |
| Oil for frying |
| Salt and pepper |
| Here is the method: |
| Fry onions gently in oil (preferably olive oil), until soft. |
| Add lentils and water, and cook gently for approx 25-30 mins, until the lentils are soft. |
| Stir occasionally to prevent sticking, and add a little more water if necessary. |
| Make batter with the flour, curry powder, egg and milk. |
| Mix together the lentil mixture and batter. |
| Season to taste. |
| Heat oil in a frying pan, and drop half cupfuls of the mixture into the pan. |
| Cook for a few minutes each side. |
