Julie’s mum, Jess, used to make these Lentil Flatties
What you need: | |

4 oz (115g) | red lentils |
1 | onion, finely chopped |
½ pint (280ml) | water |
4 oz (114g) | self raising flour |
1 level teaspoon (or more) | curry powder |
1 | egg |
3 tablespoons | milk |
Oil for frying | |
Salt and pepper |
Here is the method: |

Fry onions gently in oil (preferably olive oil), until soft. |
Add lentils and water, and cook gently for approx 25-30 mins, until the lentils are soft. |
Stir occasionally to prevent sticking, and add a little more water if necessary. |
Make batter with the flour, curry powder, egg and milk. |
Mix together the lentil mixture and batter. |
Season to taste. |
Heat oil in a frying pan, and drop half cupfuls of the mixture into the pan. |
Cook for a few minutes each side. |
